Cranberry Roast
Ingredients: 3 1/2 pounds Certified Angus
Beef ® sirloin tip roast 1 cup chopped cranberries 1/2 cup chopped
fresh parsley 3 cloves garlic, minced 1 teaspoon lemon zest 1
jar (12 ounces) cranberry chutney Instructions: 1.
Preheat oven to 500ºF. 2. Rub roast with garlic. Combine cranberries,
lemon zest and parsley. Rub roast with mixture. Place on rack in roasting
pan. 3. Bake uncovered at 500ºF for 10 minutes. Reduce heat to 350ºF
and bake 50 minutes for medium degree of doneness. 4. Slice roast
across grain. Garnish with cranberry chutney.
